Here is a great cupcake recipe that combines the favorite oreo cookie with a cupcake! Ingredients:
1 stick butter |
1 cup milk |
2 tsp vanilla extract |
2 1/4 cups flour |
1 tsp baking powder |
1/2 tsp salt |
1 2/3 cup sugar |
3 large egg whites |
24 oreo cookies |
frosting |
1 stick butter |
1 3/4 cup powdered sugar |
pinch of salt |
1/3 cup whipping cream |
1/2 tsp vanilla extract |
crushed oreos as desired |
Directions:
1. Preheat oven to 350 degrees 2. Split the oreo cookies in half and place the frosted half in the bottom of a cupcake pan 3. Crush the other halves of the cookies and reserve for later 4. In large bowl cream together the butter, milk, and vanilla until fluffy 5. In separate bowl mix the flour, baking powder, and salt. 6. Add the dry ingredients to the butter mixture and mix until combined 7. Stir in the sugar and beat for about 30 seconds on low speed, turn to medium and beat 2 more minutes 8. Add the egg whites and beat 2 more minutes 9. Stir in the cookie crumbs 10. Spoon batter into cupcake pans 11. Bake 20 minutes 12. While cupcakes cool, mix together butter, powdered sugar and salt for frosting until creamy 13. Turn mixer to high and beat until fluffy 14. Add whipping cream and vanilla and beat until smooth 15. Fold in crushed oreos as desired. |
