These have always been one of my favorite things. I could eat the entire pan no problem! This is perfect for a last minute snack ir dessert or coffee time treat because it takes so little time to cool after baking.
Ingredients:
1 cup brown sugar, packed
1/2 cup margarine
1/2 cup strong, cold coffee
1 egg
1 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1 cup mini chocolate chips
icing sugar (powdered, confectioners)
Directions:
1. Preheat oven to 350 degrees.
2. Grease a large cookie sheet. I use my 11x17
3. Mix all ingredients together in a bowl and beat well.
4. Spread it out on the cookie sheet.
5. At this point your all going to be thinking I'm crazy if I think the pan I told you to use is big enough. It will be very thin and seem like it won't be enough but trust me it is! It will puff up nicely when it's baking.
6. Bake for 15 minutes.
7. Remove from oven and let cool on a wire rack.
8. Sift icing sugar over all and cut into squares. Or enjoy one big square all by yourself!
