Continental Chicken Noodle Soup |

This is a wonderful soup recipe from Continental. They call it chicken noodle soup but it is more like a fettuccine if you thicken it a bit more. I absolutely love this recipe! Ingredients:
1 tbsp oil |
1 brown onion, diced |
1 clove garlic, crushed |
2 chicken breasts fillets, cubed ( 400 g) |
4 cups ( 1 l ) chicken stock |
100 g fettuccine |
1/2 c cream ( 125 ml ) |
1 tsp wholegrain mustard |
1 tbsp cornflour |
2 shallots, finely chopped |
Directions:
1. Heat oil in a large saucepan and gently fry onion and garlic ( I have used a wok as well ). Add chicken and fry until brown. 2. Add stock and bring to a boil. Stir in the pasta and simmer for 7 minutes or until pasta is tender. 3. Combine cream, mustard and cornflour and stir through soup. Simmer for 2 minutes or until soup thickens slightly. Stir through shallots just before serving ( I don't always add in the shallots ). 4. Enjoy! |
