This was my winning entry in the Annual Power Facts Recipe Contest sponsored by Alabama Power. I think it was in 2004. Warning: it's loaded with fat, calories and TASTE!! Ingredients:
7 medium potatoes, peeled and chunked |
8 slices bacon |
1 cup sour cream |
1/2 cup chopped onion |
3 tablespoons butter |
1 cup shredded cheddar cheese |
salt and pepper |
Directions:
1. Boil potatoes until cooked. 2. While potatoes are boiling, fry bacon. 3. Chop fried bacon. 4. Drain potatoes and place in a large mixing bowl. 5. Add all other ingredients. 6. Whip with electric mixer (don't whip until completely smooth - leave some chunks in it; if you whip it too much it will be soupy). 7. Put whipped potato mixture into a 1 1/2 quart baking dish. 8. Cover and bake at 350 degrees for 35-40 minutes. |
