From Redbook Magazine October 1993. I haven't tried this yet but I am always looking for smaller-batch baking recipes. Ingredients:
1 1/4 cups all-purpose flour |
1 teaspoon baking powder |
1/8 teaspoon salt |
1/4 cup butter or 1/4 cup margarine, softened |
1/2 cup granulated sugar |
2 large eggs |
3/4 teaspoon vanilla extract |
1 cup sweetened flaked coconut |
3/4 cup semi-sweet chocolate chips |
1/2 cup chopped walnuts |
Directions:
1. Heat oven to 350 degrees; grease and flour 9 inch square baking pan. 2. In a small bowl stir flour, baking powder, and salt to mix well; set aside. 3. In a large bowl with electric mixer at medium speed, beat butter and sugar until light and fluffy; beat eggs and vanilla in thoroughly. Reduce speed to low; beat in flour mixture just until blended. Fold in coconut, chocolate chips, and walnuts. 4. Spoon batter into prepared pan, spreading evenly; bake 25 minutes until wooden pick inserted in center comes out clean. Cool cake in pan on wire rack; cut into 4 x 1 1/4 inch bars to serve. |
