A Holiday favorite that is a must try Ingredients:
1 can crushed pineapple (large or small depending on how many servings you want) |
1/2 cup sugar |
1 tablespoon lemon juice |
1 tablespoon cherry juice |
8 oz cream cheese, softened |
1/2 cup chopped cherries |
cool whip |
unflavored gelatin (jello) |
1/4 cup cold water |
pecans and/or coconut if desired |
Directions:
1. Bring 1 can crushed pineapple and 1/2 cup sugar to boil, cook for 1 minute 2. Dissolve 1 envelope of unflavored gelatin in 1/4 cup of cold water. Add to the above 3. Add 1 tablespoon lemon juice, 1 tablespoon cherry juice, 8 oz softened cream cheese and 1/2 cup chopped cherries to all of the above 4. Let chill or cool (to desire) 5. Stir in 1 or 2 cups of cool whip and fold in 6. Add chopped pecans and coconut if desired 7. Chill until ready to serve |
