Combining the need to stretch food farther and the desire to eat more healthily, I developed this recipe which was very happily eaten by my large family. Ingredients:
3 (5 ounce) cans tuna |
mayonnaise |
3 -4 cups fresh spinach, chopped |
1 carrot, shredded or chopped |
2 green onions, chopped |
2 celery ribs, chopped |
seasoning salt (lawry's, emeril's, or celery salt) |
Directions:
1. Mix it all up thoroughly in a bowl, adding enough mayonnaise and seasoned salt to suit your taste buds. 2. Enjoy as is, or spread it on bread topped with pickles, cheese and tomato for a tasty sandwich. |
