CONFETTI SCALLOPED POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Patrick Estate in Canton, Texas in 1981. Ingredients:
1/2 cup butter |
1/2 cup white onion chopped |
16 ounces frozen shredded hash browns |
1 can cream of mushroom soup |
1 soup can full of milk |
1 cup cheddar cheese shredded |
1/2 teaspoon freshly ground black pepper |
1 cup cheese crackers crushed and divided |
Directions:
1. In skillet melt butter over medium heat then sauté onions until tender. 2. In large mixing bowl mix soup and milk then add onions sautéed in butter and stir well. 3. Add cheese, potatoes, 1/2 of crushed cheese crackers and black pepper. 4. Mix well and pour into a shallow baking pan or dish then top with remaining crackers. 5. Bake at 375 for 40 minutes then serve immediately. |
