Ready, Set, Cook! Special Edition Contest Entry: This colorful potato salad not only looks beautiful, it will awaken your tastebuds. It truly is delicious and perfect for a picnic or barbecue. Ingredients:
1 (20 ounce) simply potatoes diced potatoes with onion |
1 (10 ounce) frozen peas (thawed) |
1 red bell pepper (chopped) |
3/4 cup green onion (chopped) |
8 ounces corn (drained) |
1/2 dried cranberries |
1/2 cup canola oil |
1/3 cup white wine vinegar |
3 tablespoons sugar |
1/2 teaspoon dried dill weed |
1/4 teaspoon salt |
1/4 teaspoon dry mustard |
1/8 teaspoon pepper |
Directions:
1. In a large bowl combine potatoes, peas, red bell pepper, onions, corn and cranberries. In a small bowl, whisk dressing ingredients. Drizzle over salad and toss to coat. Refrigerate until serving. |
