While going through a pile of old Southern Living Magazines, I found this recipe. I haven't tried it yet but it looks yummy. Ingredients:
8 ounces uncooked small shell pasta |
1 pint grape tomatoes, halved |
2 cups coarsely chopped fresh spinach |
1 yellow bell pepper, chopped |
1/4 cup finely chopped red onion |
3 tablespoons fresh dill |
1 (4 ounce) package feta cheese, crumbled |
1/4 cup fresh lemon juice |
1/4 cup olive oil |
2 tablespoons red wine vinegar |
2 garlic cloves, crushed |
1 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Cook pasta according to package directions and drain. Toss pasta with tomatoes and remaining ingredients. Serve immediately or cover and chill up to 8 hours. |
