Confetti Chili Ingredients:
1 lb. lean ground turkey |
2 medium sweet potatoes, peeled and cubed |
3 bell peppers (red, yellow and/or green) cut in strips |
1 carton (32 oz.) chicken stock |
1 can (14.5 oz.) medium-hot tomato sauce with onions and chili seasonings |
1 can each (16 oz.) kidney beans, black beans and chickpeas, drained |
1 tbsp. oregano leaves |
1 cup frozen corn |
Directions:
1. Spray non-stick Dutch oven with vegetable cooking spray. 2. Heat over medium-high heat until hot. 3. Add turkey, sweet potatoes and peppers; cook and stir 5 minutes. 4. Stir in remaining ingredients, except corn. 5. Bring to a boil; reduce heat and simmer, uncovered 25-30 minutes, until vegetables are tender. 6. Add corn and heat through, 3-5 minutes. 7. Serve over pasta or rice, if desired. 8. Leftovers freeze well for future meals. |
