This dish is a welcome change when the weather turns crisp and the family wants chili...Confetti Chicken Chili that is! Ingredients:
8 ounces dried navy beans |
6 cups water |
2 tablespoons chicken bouillon granules |
salt and pepper to taste |
3 carrots, peeled and sliced |
1 pound chicken breast, cut into chunks |
3 cloves garlic, chopped |
3 tablespoons oil |
4 ounce can green chilis, chopped |
t teaspoon dried parsley |
1/2 teaspoon cumin seed |
1 teaspoon dried cilantro leaves |
2 ounce jar diced pimentos |
green pepper strips for garnish |
Directions:
1. Rinse the dried navy beans and place in a 2 quart saucepan 2. Add water, bouillon granules, salt and pepper, and carrots 3. Cook on medium -high stovetop for about 1 hour, stirring occasionally and adding more water if needed. 4. In the meantime, slightyly saute the chicken breast and chopped garlic in the oil for about 6 minutes on medium heat 5. Add the can of green chilis to the chicken 6. Add chicken mixture, spices, and pimentos to the bean mixture and cook until the beans are tender to the taste or about one more hour 7. Ladle up and serve with 2 green pepper strips for garnish |
