An easy favorite to take to picnics and holiday parties. Ingredients:
1 (15 ounce) can kidney beans, drained and rinsed |
1 (15 ounce) can black beans, drained and rinsed |
1 (15 ounce) can garbanzo beans, drained and rinsed |
1 (10 ounce) package frozen corn, thawed |
1/2 cup red pepper, chopped |
1/2 cup green pepper, chopped |
1/2 cup fresh parsley, minced |
1/4 cup onion, chopped |
2 garlic cloves, minced |
1/2 cup balsamic vinegar (or red wine vinegar) |
1/4 cup olive oil |
1 teaspoon chili powder |
1/2 teaspoon sugar |
Directions:
1. Combine veggies, beans and garlic in a large bowl. 2. Combine remaining ingredients in a jar with a tight fitting lid and shake well. 3. Pour jar contents over bean mixture. 4. Toss to coat. 5. Cover and refrigerate over night. |
