Conchiglie Salad With Tuna & Lettuce |

I like to make this on Sundays so I'm set for lunch during the week. Ingredients:
1 lb conchiglie |
6 tablespoons extra virgin olive oil |
10 ounces butterhead lettuce, trimmed and shredded |
7 ounces canned tuna in water, drained and flaked |
salt |
pepper |
Directions:
1. In large pot bring 5 qts water to a boil. 2. Add conchiglie and cook until al dente. 3. Drain pasta and place it into a serving bowl. 4. Add the olive oil and toss well. 5. Let the pasta cool for about 5 minutes. 6. Add the lettuce and tuna to the pasta. 7. Season to taste with salt and pepper. 8. Toss well and serve either slightly warm, or at room temperature. |
