Compota de Frutas (Winter Fruit Compote) |

This typical Basque dessert uses both fresh and dried fruit. Serve it with fresh cheese or spooned over pound cake. Ingredients:
6 dried figs |
6 prunes |
6 dried apricots |
1/2 cup golden raisins |
1/2 cup calvados (apple brandy) |
1 cup dry white wine |
1 cup water |
1/4 cup sugar |
1 teaspoon grated lemon rind |
2 teaspoons grated orange rind |
1 apple, peeled and cut into 12 wedges |
1 pear, peeled and cut into 12 wedges |
Directions:
1. Combine the first 5 ingredients in a microwave-safe bowl. Microwave at high 1 minute. Set aside. 2. Combine white wine, water, sugar, and rinds in a medium saucepan, stirring well; bring to a boil. Add dry fruit mixture; cover, reduce heat, and simmer 10 minutes, stirring occasionally. Add apple; cover and cook 5 minutes, stirring occasionally. Add pear; cover and cook 5 minutes, stirring occasionally. Remove from heat. Cover and let stand at room temperature 2 hours. |
