My friend at work shared this basic recipe. I added a few flavorings to make it my own. The topping is my favorite part. Hope you like it as much as me. Ingredients:
1 large can sweet potatoes (drained and mashed) |
1 stick butter |
1 cup sugar |
2 eggs |
1/2 cup milk |
1 tsp. vanilla extract |
1 tsp. ground cinnamon |
1 tsp. ground cloves |
1 tsp. ground nutmeg |
topping: 1 cup flaked coconut; 1 cup brown sugar, 1/3 cup flour, 1/3 cup melted butter, 1 cup chopped pecans |
Directions:
1. Blend first 9 ingredients and pour in buttered baking dish. 2. Blend topping ingredients and sprinkle on top of the potato mixture. 3. Bake at 375 degrees for 35-40 minutes (depending on your oven) 4. Enjoy. |
