A low fat delicious muffin! Comes from Recipes Ours and Others. Ingredients:
1 cup flour |
1 cup oat bran |
2 teaspoons baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
2 teaspoons cinnamon |
1 cup brown sugar |
1 1/2 cups grated carrots |
2 large tart apples, grated |
1/2 cup raisins |
1 cup chopped pecans |
1/4 cup oil |
1/2 cup skim milk |
2 eggs, lightly beaten |
1 teaspoon vanilla |
Directions:
1. Combine dry ingredients in large bowl. 2. Stir in carrots, apples, raisins, and pecans. 3. Make a well in the center, and add wet ingredients. Stir until just moistened. 4. Pour into greased muffin tins. 5. Bake 375 18-20 minutes. |
