Tender chicken. I found this recipe from Obesity Help. My family really enjoyed this chicken. We thought it was so tasty. When I made this recipe I used 1/2 cup sugar free apricot preserves and 1/2 cup sugar free peach preserves as I was out of apricot. I used mayonnaise made with canola oil. Ingredients:
vegetable oil cooking spray |
1 cup sugar-free apricot jam |
1/2 cup catalina dressing or 1/2 cup russian salad dressing |
1/4 cup reduced-fat mayonnaise |
1 (1 ounce) envelope dehydrated onion soup mix |
1 lb skinless chicken breast halves or 1 lb chicken thigh |
Directions:
1. In a medium bowl, whisk together jam, dressing, mayonnaise, and onion soup mix. 2. Spread 1/2 cup of jam mixture onto the bottom of crock pot. 3. Arrange chicken pieces in dish and pour remaining sauce over chicken. 4. Cover and cook for 6-8 hours. |
