Comforting Chicken Pot Pie |

Adapted from an old cookbook with my own spin Ingredients:
6 tablespoons butter |
6 tablespoons flour |
2 cups chicken broth |
1 cup heavy cream |
4 cups cooked chicken, cubed |
1/2 cup chopped onion, sauteed |
1 cup frozen peas |
1 cup cooked carrots, cubed |
1 sheet puff pastry, thawed |
Directions:
1. Preheat oven to 425 2. Melt butter in large saucepan, stir in flour and cook, stirring, for 2 minutes 3. Slowly add broth and cream and cook while stirring for 5 minutes until thickened and smooth 4. Stir in chicken and vegetables 5. Pour into 2 quart casserole dish 6. Cover with puff pastry and crimp edges 7. Cut several vent holes in pastry 8. Bake 25-30 minutes |
