I've had this recipe for so long that I have no idea where it came from. This is a nice one dish meal to prep and forget about until it's done. Ingredients:
1 tablespoon vegetable oil |
1 tablespoon butter or 1 tablespoon margarine |
1 lb boneless skinless chicken breast, cut into cubes |
1/2 cup finely chopped onion |
1/2 cup finely chopped green bell pepper |
1 (10 ounce) can condensed cream of mushroom soup |
1 cup water |
3/4 cup uncooked rice |
1/2 teaspoon salt |
1/2 teaspoon chili powder |
1/4 teaspoon pepper |
1/4 teaspoon paprika |
Directions:
1. Preheat oven to 375. 2. In a large skillet heat oil and butter. 3. Add chicken, onion and green pepper; cook and stir until chicken is lightly browned and vegetables are tender. 4. Stir in remaining ingredients. 5. Transfer to a lightly greased 1 1/2 quart baking dish. 6. Bake, covered, at 375 for 55-60 minute or until rice is tender. |
