This is one of my favorite soup recipes, and luckily, also one of the easiest! It tastes every bit as good if you substitute cauliflower for the broccoli, or if you use half broccoli and half cauliflower. Ingredients:
1 tablespoon olive oil |
1 medium onion, chopped |
1 garlic clove, chopped |
2 stalks celery, chopped |
2 potatoes, peeled and chopped |
6 cups broccoli, chopped |
1 teaspoon basil |
1 teaspoon savory |
1/2 teaspoon curry powder |
1/2 teaspoon thyme |
1/8 teaspoon nutmeg |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
4 cups vegetable broth |
Directions:
1. In a large soup pot, heat olive oil and sauté the onion and garlic, about 5 minutes. 2. Add celery, potatoes, broccoli, and spices and stir. 3. Add vegetable broth and bring to a boil. Simmer 20 minutes. 4. Purée and enjoy! |
