1. onion – 1 |
2. cinnamon sticks – 2 |
3. ginger garlic paste – 1 tbsp |
4. yogurt – 1 cup |
5. white cumin seeds – 1 tsp |
6. salt – to taste |
7. whole black pepper – 6 |
8. ground fennel seeds – 1 tbsp |
9. big cardamoms – 2 |
10. green cardamoms – 4 |
11. clove – 4 |
12. rice – 750gm soaked for 30min. |
13. black cumin seeds – 1 tsp |
14. bay leaf – 1 |
15. green chilli – 5 |
16. oil – 1/2 cup |
17. nutmeg, mace powder – 1/2 tsp |
18. star anise – 1 |
19. green cardamom powder – 1/2 tsp |
20. fried and ground dry coriander – 1 tbsp |
Directions:
1. Take a pan, heat up oil and fry sliced onion until light brown, then add black cumin, big cardamoms, cinnamon sticks, bay leaf, and black pepper, white cumin seeds, clove, star anise, ginger garlic paste., fry well. Then add yogurt and salt, fry well. Then cover and let it cook until it is done. Then add fennel seeds, dry coriander, green chilies and water, cook and bring to boil. Now add soaked rice, mix and cook until water dries. Then add nutmeg powder, mace powder, green cardamom powder, kewra and yellow color, mix and put on steam for 15 minutes. |
