From: “The Africa News Cookbook, African Cooking for Western Kitchens”. Ingredients:
1/2 lb lean ground beef |
3 large potatoes, peeled and grated |
3 large carrots, peeled and grated |
1/2 cup whole wheat flour |
2 tablespoons sugar |
1/2 teaspoon salt |
1 teaspoon curry powder |
1/2 teaspoon cinnamon |
1 teaspoon baking powder |
1 egg |
1/2 cup milk |
1/4 cup vegetable oil |
Directions:
1. Combine beef, potatoes and carrots in a large bowl. 2. In another bowl, sift together the flour, sugar, salt, curry powder, cinnamon and baking powder. 3. Add dry mix to the beef mixture, along with the egg and milk. Blend thoroughly. 4. Heat 2 tbsp of oil in a heavy skillet over medium heat. 5. Dump mixture into skillet in half-cup portions, as many as will fit at one time, flattening each slightly with a wooden spoon. 6. Cook covered, for 5 minutes or until browned. 7. Flip cakes over to brown the second side. 8. Repeat until all the mixture is used, adding the remaining oil, a bit at a time, to prevent sticking. |
