A hearty, delicious vegan soup delivers the perfect amount of zip and herby flavour with a punch of protein from the lentils and colour from carrots and tomatoes. Ingredients:
4 cups vegetable broth |
2 cups canned diced tomatoes |
1/2 cup chopped onions |
1/2 cup diced carrots |
1/2 cup sliced celery |
2 cups shredded green cabbage |
1 tablespoon lemon juice |
1/2 teaspoon oregano |
1 bay leaf |
pinch black pepper |
1 1/2 cups cooked lentils |
1/4 - 1/2 tsp tabasco |
Directions:
1. Bring all ingredients except lentils and Tabasco to a boil. 2. Cover, lower heat to simmer 20 minutes. 3. Add lentils and Tabasco, stir and re-cover. 4. Cook 30 minutes, remove bay leaf, and serve |
