Colourful Vegetable Couscous |

Fresh, quick and tasteful couscous. I like to serve this with marinated lamb and a youghurt sauce. Note: Use the amount of liquid described on the couscous package. Ingredients:
1/4 liter couscous |
1/4 liter chicken broth |
1/3 cucumber |
1 tomato |
1/4 red onion |
1 tablespoon olive oil |
1 tablespoon margarine |
Directions:
1. slice tomato and cucumber into small dices. 2. finely cut onion. 3. let the oninon stir in olive oil for a while. 4. add water/broth and bring to boil. 5. Add couscous and let all the water be absorbed. 6. Add margarine and stir. |
