COLORFUL EGG CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Inman Estate in Mineral Wells, Texas in 1990. Ingredients:
1 pound bulk pork sausage |
4 ounces mushrooms |
1/2 cup sliced green onion |
2 medium tomatoes peeled and chopped |
2 cup shredded mozzarella |
1-1/4 cup baking mix |
10 eggs |
1 cup milk |
1-1/2 teaspoons salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Combine sausage, mushroom, green onion and cook until sausage is browned. 2. Drain well then return to skillet. 3. Stir in tomato and cheese. 4. In mixing bowl mix baking mix, eggs, milk, salt and pepper then pour sausage mixture in buttered rectangular baking dish. 5. Pour baking mix mixture over top of sausage mixture and bake at 350 for 30 minutes. |
