This is such a good recipe. The white shoepeg corn really adds a unique flavor. Ingredients:
2- 15 oz cans whole kernel yellow corn |
1- 7 oz can white shoepeg corn |
1 small red onion |
1 red bell pepper |
8 oz snow peas, sliced diagonally |
3 tablespoons olive oil |
salt and pepper to taste |
Directions:
1. dice the red onion and red pepper 2. in a large bowl place all of the salad ingredients together 3. add the oil and s/p 4. toss well 5. enjoy! |
