A sweetish brown bread with no eggs or added fat. This is a quickbread, leavened with baking soda instead of yeast. As such, it will be moist but rather dense.
Ingredients:
1 quart buttermilk
1 cup packed dark brown sugar
4 cups whole wheat flour
1 1/3 cups all-purpose flour
4 teaspoons baking soda
1 teaspoon table salt
Directions:
1. Preheat oven to 350°F Grease 2 loaf pans, 9x5 .
2. Whisk buttermilk and sugar until sugar is dissolved. In another bowl, whisk both flours with baking soda and salt. Pour buttermilk over the dry ingredients and stir together until there are no visible streaks of dry flour. Divide batter between prepared pans.
3. Bake 1 hour in preheated oven, or until a knife comes out clean. Serve warm. Store leftovers tightly wrapped in plastic in the refrigerator; it reheats nicely and makes great toast.
