Colonel Sanders’ Carrot Almond Ring |

This is my personal recipe for a delicious baked carrot ring with toasted almonds. Ingredients:
3/4 cup almonds, blanched |
1 tablespoon butter |
1 lb peeled carrot, grated |
3/4 cup beaten egg |
1 1/2 cups milk |
1 teaspoon salt |
1 teaspoon sugar |
1 teaspoon finely grated onion |
Directions:
1. Saute almonds in butter until golden. 2. Coarsely chop almonds. 3. Grate or shred carrots. 4. Cook carrots in boiling water until tender. 5. Drain carrots and place in a baking ring. 6. Beat the eggs slightly, then add all of the other ingredients. 7. Mix well and pour evenly over the carrots. 8. Place baking ring in a pan of water. 9. Bake 35-40 minutes at 325 F degrees, until firm. 10. Serve. |
