COLOMBIAN CHEESY POTATOES, I GOT OUT OF MY CARIBBEAN COOKBOOK I BOUGHT 8 YEARS AGO NICE SIDE DISH Ingredients:
2 -1/2 pounds of new or salad potatoes |
2 tablespoon butter |
4 spring onions ( scallions ) thinly sliced |
2 large tomatoes peeled ,seeded and chopped. |
1 cup of double ( heavy) cream |
1 cup grated mozzarella |
salt and pepper to taste |
Directions:
1. PLACE POTATOES IN A LARGE PAN OF SALTED COLD WATER., COVER AND BRING TO A BOIL. 2. LOWER THE HEAT AND SIMMER FOR 18 TO 20 MINUTES.UNTIL TENDER. 3. MEANWHILE, MELT THE BUTTER IN A FRYING PAN OVER LOW HEAT, ADD THE ONIONS, AND COOK GENTLY , STIRRING OCCASIONALLY, FOR 5 MINUTES, UNITL SOFTENED. 4. STIR IN THE TOMATOES AND COOK FOR A FURTHER 2 TO 3 MINUTES, STIRRING OCCASIONALLY UNTIL THE TOMATOES BREAK UP. 5. DRAIN THE POTATOES AND PUT THEM IN A WARM SERVING BOWL. ADD THE CREAM TO TO ONION AND TOMATO MIXTURE, BRING TO A BOIL, THEN ADD CHEESE, STIRRING UNTIL IT MELTS. 6. SEASON WITH SALT AND PEPPER TO TASTE. 7. POUR THE HOT CREAM SAUCE OVER THE POTATOES AND SERVE IMMED ......... |
