I made this for a potluck and it was devoured. Several people asked for the recipe. It was one of those... what do I have on hand dishes. It has lots of flavor and I will definitely make this again. Good comfort food. Ingredients:
2 lbs dried pinto beans |
1 lb ground pork |
2 cups strong black coffee |
1 onion, minced |
1 (10 ounce) can tomato sauce |
1 large tomato, minced |
1/2 teaspoon cayenne pepper |
1/2 teaspoon cajun seasoning |
1/2 teaspoon dry mustard |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Sort, Rinse and Soak beans overnight. 2. Brown pork and onions in frying pan. 3. Add spices and coffee. 4. Bring to a boil; reduce to a simmer for 5 minutes. 5. In crock pot or large sauce pan add beans, pork mixture, can of tomato sauce, and minced tomato. 6. Cover with water and cook until tender. |
