The homemade BBQ sauce adds a zesty kick to this vegetable dish. Ingredients:
1 lb collard greens, destemmed and chopped |
1 1/2 cups ketchup |
1/2 cup water |
2 tbsp. brown sugar |
1 small onion, chopped |
2 tbsp. lemon juice |
1 tbsp rice vinegar or apple cider vinegar |
1 tbsp. worcestershire sauce |
1 clove garlic, minced |
1 tsp. spicy brown mustard |
1/4 tsp. hot sauce |
Directions:
1. Boil the collard greens for 25 min, meanwhile make the BBQ sauce. 2. For the BBQ sauce: In a medium saucepan, combine the rest of the ingredients, bring to a boil. Reduce the heat, cover and simmer for 15 min. Stir occasionally while cooking. 3. Drain the collards and toss with the BBQ sauce. Serve warm as a side dish. 4. You may have more BBQ sauce than you need. Use as much as you like, store the rest in a ziplock in freezer. Great for using with any meat. |
