this is my take on classic southern greens. i do no eat pork so you ill always see a smoked turkey wing or leg in mine. if you can't find collards, mustard greens work equally as well. works really well in the crockpot i have recently discovered. Ingredients:
1 bunch of greens, cleaned well and torn in to pieces (tear do not chop) |
1 smoked turkey leg |
3tbls white vinegar (more to taste if greens are still bitter) |
salt and pepper |
2 lbs hot sauce |
water to cover |
Directions:
1. soak greens and thoroughly clean remove stems and tear in to bite size pieces 2. add smoked turkey leg, greens, hot sauce, and vinegar to crock pot 3. cover with water 4. turn pot on high and let cook for 6-8 hours. 5. pull meat off the bone when finished cooking 6. taste throughout to check for seasoning. 7. i like my greens with some heat so i'll pump up the hot sauce 8. if greens still taste bitter, add a little more vinegar. |
