Ingredients:
1 (1/2-pound) ham bone or ham hock |
3/4 pound spanish sausages or chorizo, sliced |
1/4 pound salt pork, rinsed |
1 quart water |
1 (16-ounce) package frozen chopped collard greens |
1 (16-ounce) can great northern beans, undrained |
1 small onion, finely chopped |
1 small green pepper, seeded and finely chopped |
1 tablespoon bacon drippings |
4 small red potatoes, peeled and diced |
1 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Combine first 4 ingredients in a large Dutch oven. Bring to a boil. Reduce heat; cover and simmer 30 minutes. Add collard greens and beans; cover and simmer 30 minutes. 2. Sauté onion and green pepper in drippings until tender. Add sautéed vegetables, potatoes, salt, and pepper to collard green mixture; stir well. Cover; simmer 30 minutes or until vegetables are tender. Remove and discard ham bone and salt pork. 3. Spoon soup into individual bowls. Serve hot with cornbread, if desired. |
