Ingredients:
4 cups chopped fresh collard greens |
10 cup boiling salted water |
8 ounces sliced fresh mushrooms |
1/2 bell pepper, chopped |
2 garlic cloves, minced |
4 green onions, sliced |
4 cups cooked rice |
2 tablespoons olive oil |
Directions:
1. Cook collard greens in boiling salted water 7 minutes; drain. Sauté mushrooms, bell pepper, garlic, green onions, rice, and collard greens in hot olive oil in a skillet over medium heat until thoroughly heated. |
