Coleslaw With Radishes And Lime |

I always experiment with making coleslaw and so today I incorporated radishes, scallions, fresh lime juice and olive oil for a refreshing non mayo based coleslaw. Hope you like it as we do. The radishes give a hint of color too Ingredients:
1 med head of green cabbage |
1/2 bunch scallions chopped- white and green parts |
1 small package of red radishes chopped |
juice from several fresh limes |
bit of grated lime zest |
olive oil to moisten |
sugar or splenda to sweeten to taste |
powdered corriander to taste |
coarse salt and grated black pepper to taste |
Directions:
1. Mix the shredded cabbage, scallions and radishes together. 2. Squeeze on juice from fresh limes with some of the zest 3. Add olive oil to moisten 4. Season with powdered corriander, salt, pepper, sugar ( or splenda ) to taste 5. Chill well and stir well before serving 6. A nice refreshing coleslaw |
