Prep: 9 minutes. Buy a coleslaw mix without the dressing packet, or discard the packet if there's one in the package. Ingredients:
1/4 cup light mayonnaise |
1/4 cup reduced-fat sour cream |
1 tablespoon sugar |
1/8 teaspoon salt |
1 (8-ounce) can crushed pineapple in juice, drained |
4 cups cabbage-and-carrot coleslaw mix (about 8 ounces) |
1/3 cup (2-inch) pieces red bell pepper |
Directions:
1. Combine first 5 ingredients in a medium bowl, stirring with a whisk until blended. 2. Combine coleslaw and red pepper in a large bowl; add mayonnaise mixture, tossing gently to coat. Cover and chill. |
