This is a really easy, healthy, filling lunch or side dish, especially in summer because it's chilled. It's my simple takeoff on Italian bean salads. Ingredients:
white beans, canned, 10.5 oz |
apple cider vinegar, organic, around 4t |
olive oil, 1.5 t |
whole coriander seeds, crushed, 3/4 t |
basil, fresh, 3-4 large leaves |
dill, fresh or dried, 1/4 t |
tabasco, 2 or 3 shakes |
Directions:
1. Rinse white beans and add to glass bowl 2. Pour in the vinegar, crushed coriander seeds, Tabasco and dill 3. Roll up basil leaves into one roll and slice 1/8 thick slivers 4. Mix and serve! 5. (For additional servings, just add more beans and seasonings to taste-it's really easy) 6. Calories - around 200 per serving |
