Tangerine are wonderful. Their juice is tart, sweet and delicious. This is a pretty dessert that is easy to do ahead. Ingredients:
souffle |
2 envelopes unflavored gelatin |
1 1/2 cup sugar, divided |
1/2 teaspoon salt |
1/4 teaspoon of ground ginger |
8 eggs separated |
1 1/3 cups of fresh tangerine juice (about 6 o7 if they are small) |
1 tablespoon of fresh lemon juice |
1/2 teaspoon of grated tangerine rind |
powdered sugar and mint leaves |
glazed tangerine pieces |
2 sectioned tangerines, all white pith strings removed |
2/3 cup of water |
2 cups of sugar |
1/4 cup of grand marnier |
1 tablespoon of chopped crystallized ginger |
Directions:
1. Combine gelatin, 2/3 cup sugar, salt and ginger. 2. Beat egg yolks and tangerine juice. 3. Stir into gelatin mixture. 4. Place over low heat, stir until gelating dissolves and mixture thickens. 5. Remove from heat. 6. Stir in lemon juice and rind. 7. Chill until mixture mounds slightly when dropped from a spoon. 8. Prepare souffle dish by making a collar with foil that extends two inches above rim of the dish. 9. Fasten with tape. 10. Beat whites until soft peaks form. 11. Gradually beat in remaining 2/3 cup of sugar. 12. Beat until stiff peaks form. 13. Fold into tangerine mixture. 14. Pour into prepared dish. 15. Chill at least one hour. 16. While it chills make glazed tangerine slices 17. Combine 2 cups of sugar with 2/3 cup of water 18. Stir until dissolved and bring to a boil. 19. Simmer 20 minutes. 20. Remove from heat, add 1/4 cup of Grand Marnier. 21. Add tangerine sections and candied ginger. 22. Cover and let stand 20 minutes. 23. Stir occasionally to baste the sections. 24. On individual dessert plates, pool a few pieces of candied tangerine. 25. Top with chilled tangerine mousse/souffle. 26. Sprinkle with powdered sugar and mint leaves. |
