A refreshing salad especially on a hot summer night Ingredients:
3cups cooked rice |
2 cups cooked, peeled and deveined shrimp |
1/2 pound fresh mushrooms, sliced |
1 cup sliced water chestnuts |
1 cup chopped green pepper |
4 ounce jar sliced roasted peppers,drained |
1/4 cup chopped fresh parsley |
1/4 cup chopped fresh chives |
1 cup olive oil |
3 tablespoons white vinegar |
3 tablespoons soy sauce |
2 teaspoons dijon mustard |
1/2 teaspoon hot sauce |
salt and pepper to taste |
Directions:
1. Combine rice, shrimp, sliced mushrooms, water chestnuts, green pepper, roasted peppers, parsley and chives in a large bowl; toss gently. 2. Combine olive oil, vinegar, soy sauce, mustard and hot sauce in a small bowl; stir well 3. Pour dressing over rice mixture; toss gently. Add salt and pepper to taste. Cover and chill at least 1 hour |
