Ingredients:
2 carrots, shredded |
6 tablespoon(s) creamy peanut butter |
1 bag(s) frozen broccoli florets, thawed |
2 clove(s) garlic |
1 piece(s) ginger |
1 red bell pepper, sliced thin |
1 pound(s) rice noodles |
3 tablespoon(s) rice vinegar |
6 scallions, chopped |
2 tablespoon(s) sesame oil |
1/2 cup(s) soy sauce |
1 teaspoon(s) sugar |
Directions:
1. Boil rice noodles for 6 minutes and drain. 2. In processor, mix garlic, ginger, soy sauce, rice vinegar, sesame oil, peanut butter and sugar. 3. Toss noodles when warm with sauce. Add vegetables and chill. |
