better than tuna salad any day of the week! and no added salt- though it is salty! Enjoy! Ingredients:
1/4 red onion, minced |
juice of 1/2 lemon |
zest of one lemon |
2 tbsp capers |
2 tbsp caper juice |
2 tbsp greek yoghurt |
1 can of salmon |
fresh cracked pepper to taste |
Directions:
1. mix all ingredients together in a bowl. 2. divide in two and serve over a bowl of whole wheat pasta or with whole wheat ryvita crackers. Try a sandwich on crispy whole grain bread. 3. elegant and easy. 4. healthy and delicious. 5. Enjoy! |
