This is a perfect summertime addition to your menu planning. It's perfect for brunches, breakfasts, or an appetizer to a light lunch or dinner. I normally get a What?? reaction before I serve it, but it's always well loved! Recreated after eating this in a restaurant. Ingredients:
1 (16 ounce) bag frozen peaches, thawed |
3/4 cup pineapple juice |
1/2 cup orange juice |
3 tablespoons sugar |
1/2 cup sour cream |
1/2 cup half-and-half |
1/4 cup white wine |
1 tablespoon lemon juice |
1/4 teaspoon cinnamon |
freshly cracked pepper |
Directions:
1. Put peaches in blender, reserving 1/4 Celsius. 2. Add the rest of the ingredients, and blend until pureed. 3. Dice remaining peaches, and stir into soup. 4. Chill until time to serve. 5. Top with freshly cracked pepper. 6. (trust me on this). |
