Ingredients:
1 tablespoon melted butter or 1 tablespoon canola oil
1 cooking spray
3 eggs
1 cup milk, preferably whole
1 teaspoon vanilla or vanilla paste
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons sugar
1 teaspoon cinnamon
Directions:
1. Spray nine muffin cups or a six-cup popover pan with vegetable oil, then drizzle with butter or oil. Break eggs into a bowl and mix well. Add milk, vanilla, flour and salt. Beat with a wire whisk or spoon, disregarding lumps. The batter should be lumpy.
2. Pour batter into prepared muffin cups, filing each cup evenly. Sprinkle with cinnamon and sugar mixture. Place popovers in cold oven on the lowest rack. Turn on oven to 425 degrees. Bake for 25 minutes, until golden and puffed. Serve immediately.
