From a 1988 posting in the New Hampsire Telegraph food pages. I found cod to be the best as it is more sturdy. You can also add crab and shrimp. Ingredients:
2 tablespoons margarine |
2 tablespoons flour |
1/2 teaspoon salt |
1 (16-ounce) can stewed tomatoes, cut up and not drained |
1/2 pound fish, such as sole, cod or haddock, cut into 1-inch pieces |
1/2 pound cut partially steamed asparagus or not-steamed zucchini |
1 cup part skim ricotta cheese |
1 cup skim milk |
Directions:
1. Melt margarine, and stir in flour. 2. Add salt, tomatoes, fish and asparagus or diced zucchini; cover and simmer 8-10 minutes. 3. Combine cheese and milk in blender. 4. Add to fish; heat to serving. Do not boil. |
