Sweet cherry tomatoes float atop tangy, creamy cucumber soup for a refreshing lunch or light supper that's easy to prepare. Ingredients:
1/2 cup chopped fresh cilantro |
1/4 cup chopped onion |
1/4 cup fresh lime juice |
1/4 cup fat-free buttermilk |
1/4 cup reduced-fat sour cream |
1 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
5 cucumbers (about 2 1/2 pounds), peeled, halved lengthwise, seeded, and coarsely chopped |
1 jalapeƱo pepper, halved and seeded |
1 cup cherry tomatoes, halved |
Directions:
1. Place first 9 ingredients in a food processor; process until smooth. Top with tomatoes. |
