This cold soup served as an appetizer with special crackers is a winner ...or for brunch with crusty bread and cheese. Sometimes the simplest things are best! Ingredients:
english cucumber |
cups natural yogurt |
1 teaspoon minced garlic |
1 tablespoon chopped dill |
1 tablespoon sunflower oil |
finely chopped walnuts (optional) but great |
2 cups cold water |
kosher or grey salt |
freshly ground black pepper to taste. |
fresh chopped chives make a nice topping and this is a great opening act for a heavy meal. |
Directions:
1. Grate the cucumber and put it in a bowl. 2. Whisk all the remaining ingredients together in the bowl with the grated cucumber. 3. Let the soup sit in a refrigerator for 20-30 minutes covered,.and serve |
