COLD CUCUMBER SALAD This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Wasters Estate in Van, Texas in 1992. Ingredients:
2 cucumbers |
1 teaspoon kosher salt |
1 teaspoon white vinegar |
1/2 cup mayonnaise |
1/4 cup sour cream |
1 tablespoon chopped fresh dill |
1 teaspoon freshly ground black pepper |
Directions:
1. Peel and slice cucumbers and place in glass bowl then sprinkle with salt and vinegar. 2. Cover and let stand 30 minutes then pour off excess liquid and drain in colander 30 minutes. 3. Add mayonnaise, sour cream, dill and pepper then mix well. 4. Cover and refrigerate until ready to serve. |
