Cold Cucumber Avocado Soup |

A healthy tasty soup which can easily be multiplied, Use Greek yoghurt for best texture Ingredients:
4 med cucumbers, peled seeded and chopped |
1 ripe avocdo, pitted and chopped |
2 scallions chopped |
6 oz plain greek thick yoghurt ( fat free okay too ) |
juice and zest of half a lemon |
1 jalepeno, seeded and chopped ( optioonal 0 |
1/2 cup water ( i add a spash of white wine at times ) |
salt and pepper |
chopped cilantro for garnish |
Directions:
1. Prep time does not include chilling 2. Blend cucumber till smooth 3. Add remaining ingreisdnts and blend smooth again 4. Add water as blender is running, a little at a time for desired consisitency 5. Chill mixture well 6. Chceck for seasoning again 7. Serve in samll glass bowls and garnish with cilantro or herb of choice |
