Cold Chicken With Sherry

A delicious way to use up leftover chicken from The Colour Book of Cooking for Two
Ingredients:
1/2 chicken, cooked
1 egg yolk
5/8 cup cream
2 tablespoons sherry wine
lemon peel, finely shredded
Directions:
1. Cut chicken into bite-sized pieces, discarding the bones and arrange in serving bowl.
2. Beat egg yolk with cream and sherry.
3. Cook, stirring all the time, over gentle heat until sauce thickens slightly.
4. Pour sauce over cold chicken and sprinkle with lemon peel.
5. Serve chilled.
